The Bay Tree Bistro was opened on the 13th of February 2015, above one of Waterford's busiest bars on Ballybricken called the Exchange. In a very short period of time it had established itself as one of Waterford cities "go to" restaurant's for its different take on the dining scene in the city.

In December 2015 The Bay Tree Bistro was voted McKenna Guides Best Newcomer Restaurant of The Year and in February 2016 awarded Waterford's Best Newcomer Restaurant by the Restaurant Association of Ireland. In April 2016 The Bay Tree Bistro was hugely honoured with winning Munster and All Ireland's Best Newcomer Restaurant at the coveted Food Oscars in Dublin. A feature on Aer Lingus's inflight Cara Magazine alongside some big name chefs was the next big achievement for the practically new restaurateurs and it was these massive achievements that gave Keith and Carmel Boyle the confidence to take the next step and open their brand new restaurant on Waterford's Quays.

Since their move in July last year the all new Bay Tree Bistro has hit the ground running. Attracting big name chefs, food critics and travel bloggers to the new premises, 3 Big Reviews from John and Sally Mckenna, The Taste Magazine and Lucinda O Sullivan in the Irish Independent, a place in the Sunday Business Post's top 101 Restaurants in Ireland, and Bord Bia's Just ask Restaurant of the Month looked like the new look restaurant was setting a new bar for Waterford's Culinary Scene. Along with that Keith himself has also been awarded with The Best Chef in Waterford and The Best Chef in Munster  2017 at this year's Restaurant Association of Irelands Gala Award Show in Dublin. 

We now open from Tuesday – Saturday from 5pm-10pm with our Pre Dinner Menu running from 5pm all night Tuesday, Wednesday and Thursday and from 5pm-6.30pm Friday and Saturday  and our 3 or 5 Course Dinner menu running all night every night. So why not come dine with us at our new venue on the Quay, Come Early and have a pre dinner cocktail in our fabulous Ground floor bar.
